Pinhead Gunpowder

Pingshui gunpowder is made by tightly rolling green tea leaves into tiny balls the size of a pinhead. The greyish-blue pellets end up resembling gunpowder. Steeped to a pleasant bitterness, the tea’s strong flavor stands up well to mint and sugar, a traditional Moroccan use for the style, but it makes a killer Southern-style sweet tea, too.
