In The Middle Oolong

In The Middle Oolong is a smooth and incredibly fragrant tea, slightly sweet with a touch of dryness. A semi-fermented tea, oolong falls between unoxidized green tea and fully oxidized black tea. While green tea leaves are heat-treated to prevent oxidization, the enzymes in black tea are exposed to humidity until the leaves are fully oxidized, then fired to stop further fermentation. Oolong is somewhere in the middle, using mature tea leaves that are carefully oxidized and fired to create unique variations. The leaves are stirred during oxidization to break down their cellular structure, releasing oils that create the flavor and aroma of the final product.

If you want to be precise, oolong is really an anglicization of the Mandarin wulong. Though production started in China, wulong has become something of a specialty in Taiwan.

This In the Middle Oolong is characteristic of Taiwanese production. On the heavily-oxidized side, it has long, twisted leaves, and a rich amber color when steeped. It maintains some of the fresh, grassiness of green tea, but with a tannic, full-bodied, and fruity quality typical of a black tea.
